What Are the Types of Food Thickeners?

Cortisol/Gelatin Polysaccharide

Gelatin polysaccharide is an insoluble glucan. It's produced by microorganisms and consists of β-(1→3)-glucoside bonds. After heating their suspensions, they not only form hard and elastic heat-irreversible gels, but also can form a general term of heat-reversible gel polysaccharides.

Uses of Cortisol/Gelatin Polysaccharide:

Used in areas such as meat products, pasta products, aquatic products, baked products, frozen products, and other product fields.

Sodium Polyacrylate

Sodium polyacrylate is a water-absorbing polymer and an excellent additive for any detergents. It is sold under brands such as Nature's Miracle and Waterlock and can be used in diapers, feminine hygiene products, and automatic dishwashing liquids.

Applications of Sodium Polyacrylate:

This product can be widely used in drinking water treatment, industrial water supply processes, industrial wastewater and effluent treatment, urban domestic sewage treatment, saltwater refinement process of the chlor-alkali industry, etc. As a precipitation and flocculation agent, synthetic detergent, precipitation aid, emulsion thickener, paper enhancer, concrete enhancer, synthetic fiber modifier, hard water softener, pigment dispersant, soil modifier, etc.

It can also be applied in papermaking, textile, petroleum drilling, cosmetics, coatings, metallurgical beneficiation, the production of anhydrous sodium sulfate, dust-proof agents, etc.

Gellan Gum

The main components of gelatin are glucose, glucuronic acid, and galactose, in a ratio of 2:1:1, four monosaccharides form a linear polysaccharide repeat unit. The natural high-acetyl structure contains acetyl and glyceryl groups that reside on the same glucose unit, and each repeat unit has an average of one glyceryl group and one acetyl group every two repeat units. After saponification by KOH, it is converted into low-acetyl gellan gum. The glucuronate group can be neutralized by potassium salt, sodium salt, calcium salt, and magnesium salt. It also contains a small amount of nitrogen produced during fermentation.

Gum Arabic

Gum arabic is the oldest and most famous natural gum in the world. Its application is relatively extensive, especially in food additives, such as emulsifiers in beverages, flavor retention of capsules, food binders, candies, enhancing texture, preventing precipitation, etc., with dozens of uses. Especially under the requirements of modern people for healthy food, natural plant Gum Arabic contains a large amount of dietary fiber, which meets the requirements of healthy food. The characteristics of this high-fiber food have become excellent raw materials for modern food.

Carboxymethylcellulose Sodium

Carboxymethylcellulose Sodium (CMC) is a water-soluble cellulose ether, and its solid form is usually called "cellulose sodium gel" or "cellulose gel." It is made by alkali treating cellulose in wood pulp and cotton linters, and then neutralizing it with an acid such as acetic acid.
