What is L-malic acid?


Malic acid, also known as 2-hydroxybutanedioic acid, has two stereoisomers due to the presence of an asymmetric carbon atom in its molecule. There are three forms in nature: D-malic acid, L-malic acid, and their mixture, DL-malic acid. It is a white crystalline or crystalline powder, highly hygroscopic, and easily soluble in water and ethanol. It has a particularly pleasant sour taste. Malic acid is mainly used in the food and pharmaceutical industries.


In the food industry, it can be used in the production and blending of beverages, liqueurs, fruit juices, as well as the manufacture of candy, jam, etc. It also has an antibacterial and preservative effect, and can remove tartaric acid salts in the brewing process.


Functions of L-malic acid
